Food scientists break down parade foods that could spoil your Mardi Gras

As Mardi Gras approaches, food scientists from University of Holy Cross in New Orleans reveal results of first-of-its-kind study testing the safety of popular parade foods. The researchers tested fried chicken, ham and cheese sandwiches, jambalaya, onion dip, dairy-based daiquiris and an ice chest full of beer to learn more about foodborne bacteria on parade route favorites.To complete the study, food and the ice chest samples left at room... + full article
